This
is a family recipe that we make every year in the fall and around Christmas time.
We've been making it for several generations! It's a good recipe to make as a
Thanksgiving treat, or when you are studying the Pilgrims! PUMPKIN
COOKIES 1
cup Brown sugar firmly packed 1
cup canned pumpkin 1/2 cup oil 1
Tsp. vanilla 2 cups flour 1
Tsp. Baking soda 1
Tsp. Baking powder 1/2
Tsp. salt 1/2
Tsp. cinnamon 1/2
Tsp. nutmeg 1/4
tsp ginger 1
cup raisins 1/2
cup chopped nuts For
the Icing: 1/2
cube of softened margarine or butter 1/2
tsp vanilla 1/2 tsp
maple flavoring 1/2
Box of powdered sugar (or however much to get the right consistency) 2
Tbsp. Milk (or however much to get the right consistency) Beat
together sugar, pumpkin, oil and vanilla. Sift together dry ingredients, add and
stir untill smooth, blend in raisins and nuts. Drop by spoonfuls on greased baking
sheet. Bake ar 350 for 12 to 15 minutes. To
make the icing, just put about 1/2 cube of softened margarine, 1/2 tsp vanilla,
1/2 tsp maple flavoring, powdered sugar and a little milk to make the right consistency.
Add more powdered sugar if you accidentally put too much milk. It doesn't take
much milk, start with a couple of tablespoons and go from there.
